Decarboxylation

Cannabis should undergo decarboxylation before it is consumed (or upon consumption, if you’re smoking or vaping) to release the full potency of THC. Many people say this requires baking it for an hour at 200 degrees Fahrenheit, but others tell you that, since the cannabis will be mixed with water and butter at around that temperature for several hours, pre-decarbing is unnecessary. If you choose to decarb ahead of time, simply spread the cannabis on a cookie sheet and bake it for about an hour at 200 degrees. Otherwise, skip directly to the next step.

Cannabutter ingredients

  • 1 ounce or more of ground cannabis
  • 1 stick or more of salted butter
  • 2 cups or more of water

Note: You need about one ounce of cannabis for every stick of butter. The amount of water you use will be determined by the size of your cooking pot, as you need to make sure the butter stays at least one or two inches from the bottom of the pan on top of the water.

Use an herb grinder to finely grind your cannabis. Add at least 3 inches of water to the cooking pot and bring it to a boil. Reduce the heat slightly and add in your stick(s) of salted butter. Once the butter melts, gently stir in your ground cannabis. Use your thermometer to make sure the temperature stays at around 200 degrees. Allow it to infuse on simmer for about 3 hours, adding small amounts of water as necessary to maintain the butter one inch or more above the bottom of the pot.

After the three hours are up, turn off the heat, move the pan off the burner and allow the mixture to cool for 30 – 45 minutes. Place the colander over the chilling container and line it with cheesecloth. Carefully pour the melted water and butter into the colander, using a spatula to scrape the pan of any remaining melted butter. When the pan is empty, set it aside and carefully grab the edges of the cheesecloth. Lift the cloth out of the strainer and set the strainer aside. Wrap the top of the cheesecloth around the strained cannabis and liquid. Squeeze the cheesecloth to remove all excess moisture and oil. Discard the cheesecloth and its contents.

Cover the container and place in the refrigerator for several hours or overnight. Use a mixing bowl filled with warm water, and submerge the chilling container for about one minute to loosen the edges of the cannabis butter. Remove the container from the bowl of water and pour out the water. Remove the lid from the chilling container and gently pour the liquid out of the chilling container into the mixing bowl until only the disk of the cannabutter remains.

Pat the cannabis butter dry with paper towels, if desired. Transfer the cannabutter into the storage container. It can now be used as a one-to-one substitute in any recipe that calls for regular butter. Use it to make the brownie recipe listed below.
